It's hard to believe that 10 years have marched past since Cabalié's launch in 2002. It comes from Maury in southern France - a town boasting a wine heritage dating back to Roman times and a world famous fortified red (vin doux naturel).This Cabalié is a Limited Edition 10th Anniversary special carefully crafted by the Parker praised winemaker Hervé Sabardeil using amazingly dense Grenache and Carignan grapes from vines up to a century old. Roche Lacour winemaker Laurent Mingaud works his magic beneath the hills of Limoux. Here, the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531, centuries ahead of Dom Pérignon. Bottles back then were fragile and didn't travel, so the monks' success remained a secret. After perfecting his sparkling white, Laurent wanted to make a rosé, but appellation laws would not allow it. Undaunted, he petitioned the authorities and won.This pioneering pink gains its salmon hue in the same manner as the finest Champagnes, from gently pressed Pinot Noir (others merely blend red and white wine).Enjoy this delightful rosé when you have something to celebrate - or treat opening a bottle as a celebration in its own right.
