Red Wine

Sordo Barolo 2008 £215.88 (12 bottles), £107.94 (6 bottles)
Barolo is one of Piedmont's top two reds, alongside Barbaresco. The local speciality, Nebbiolo, is to the region what Pinot Noir is to Burgundy. Nowhere else does Nebbiolo produce such a fine array of aromas, "from roses to violets and damp woodland to tar" (Hugh Johnson).Giorgio Sordo is the fourth generation to run the estate, a true local who speaks only Italian. He has some of the best vineyards in the region and used all three of the closely related strains of Nebbiolo - Lampia, Michet and Rosé - to produce a complex and elegant wine. Matured for two years in oak, the wine has a wonderfully mellow character combined with great intensity and a steely freshness. It will be superb with pheasant or with simple pasta with fresh truffles.

White Wine

Double Agent Sauvignon Blanc 2012 £95.88 (12 bottles), £47.94 (6 bottles)
There isn't much that Jean-Marc Sauboua doesn't know about Sauvignon Blanc but nevertheless he was happy to trade a few secrets with 'double agent' James Macdonald. Winemaker for Hunter's in New Zealand, James is part of the outfit that arguably put Marlborough Sauvignon on the map.The plan was to produce a Kiwi style Sauvignon at Le Chai and luck was on their side. The smallest crop JMS had ever seen in Bordeaux meant that the 2012 grapes had excellent concentration and richness. For the full monty, James decided to blend in some grapes from Gascony in southwest France - which JMS had discovered while out on field operations. With astonishing intensity and pungent herbal aromas, the wine fits the brief exactly.

Champagne & Sparkling

Ca' Bolani Frizzante Prosecco NV £44.95 (6 bottles)
Prosecco is as Italian as gelati, enjoyed in some circles on a daily basis! The best are the delicious, handcrafted versions from artisan producers like the Zonin family, winemakers since 1821. Ca' Bolani is one of the most stylish Proseccos you'll ever taste. It's made entirely from their premium estate grown grapes in Friuli, Italy's top white wine region. To guarantee quality, they keep every aspect of production 'in house' - an approach that pays off with top awards. This wine won Vinitaly's top prize (Gran Menzione) and a Gold medal from the Mundus Vini competition.Winemaker Marco Rabino favours the frizzante style - less fizzy than Champagne, it's light, zippy and very refreshing; full of mouthwatering pear and citrus flavours.
