Historic Spier Estate is one of the original pioneers of South African wine, established in 1692 by Arnoud Jansz, a German soldier in the service of the Dutch East India Company. Jansz planted the farm's first vines - just 200 - and made his first wine in 1700, predating many of Bordeaux's most famous châteaux.The Malbec grapes for North Bank were selected from Spier's own vineyards and vinified by Lizanne Jordaan, who passed her degree in winemaking and viticulture at Stellenbosch in 2005 and has worked since in New Zealand and Bordeaux. She matured just a third of this red in French oak for six months to season the fruit with a little spiced complexity. Deeply flavoured and silky smooth, it's perfect with roast lamb or venison sausages.

Franschhoek is the culinary capital of South Africa - perhaps because of the influence of the French Huguenots who settled there in the 17th century. This white is from a top cellar in the region, and was created to honour the contribution of these immigrants to the country's wine industry.Young winemaker Richard Duckitt began his career in Stellenbosch, and quickly showed a flair for his craft during his first year at the Muratie Wine Estate - going on to gain valuable experience at the world renowned Stags' Leap cellars in Napa Valley. He crafted this fine Chenin Blanc using a special yeast to slow fermentation and matured it on its fine lees for a nutty complexity. A fine partner to foil baked white fish or spicy Thai dishes.

Roche Lacour winemaker Laurent Mingaud works his magic beneath the cool hills of Limoux. Here, the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531, centuries ahead of Dom Pérignon. Bottles back then were fragile and didn't travel, so their success remained a secret. The cuvée's key grape is Chardonnay - like Blanc de Blancs Champagne - with the balance comprising bright, lemony Chenin Blanc and the native sherbety Mauzac, all from the highest vineyards to ensure the most delicious freshness.
