Château Portal is one of the leading estates in the Minervois with a history dating back to the 11th century. The property was home to French nobility throughout the Middle Ages and to this day retains a restored 8th century chapel. Jérôme Portal's 80 hectares of vines grow right next to the region's top cru, La Livinière.Cuvée Jérôme is crafted mainly from rich and spicy Syrah supported by raspberry rich Grenache and spicy Carignan, the incredibly intense flavours of which are due to rare 100 year old vines. The wine is aged for a year in French oak barrels, lightly toasted over a naked flame to impart mocha character and extra complexity.Serve this splendid southern French red with traditional cassoulet or roast shoulder of lamb.

White Wine

SPLIT ROCK SAUVIGNON BLANC 2011 £107.88 (12 bottles), £53.94 (6 bottles)
Named after the landmark Split Apple Rock in Able Tasman National Park, this wine is from Hermann Seifried, who built his winery on the South Island in 1973 with the help of his local church. He'd only arrived in New Zealand three years earlier from Austria, via Germany (where he studied winemaking) and South Africa. He met and married Kiwi lass Agnes Wilkins, and two years later they realised their shared dream of growing grapes. 1976 was their maiden vintage and, 35 years on, the Seifrieds are still going strong and racking up a host of awards. Gooseberry-fresh Split Rock slips down a treat on its own and partners dishes such as prawns with a spicy salsa, a nectarine and haloumi salad, grilled chicken, poached salmon or creamy pasta.
